You unknowingly created my favorite wine, Champagne. It’s perfect for a special occasion or just for brunch. The original Champagne was cloudy full of yeast. A increadible well thought out process has since become standard. Adorned by royalty, your bubbles are intoxicating (That might be the alcohol content). It is estimated that every bottle has 49 million bubbles. There are few things as elegant and beautiful as a glass of Champagne in a flute with a continuous flow of bubbles rising to the top. The perfect combination of Pinot Noir, Chardonnay, and Pinot Meunier. Napoleon would carry Champange with his troops, saboring (And savoring) a bottle after every victory.
The process involved to make every bottle perfect from riddling to disgorging and the dosage, is long and tedious. Dom P, my hat is off to you good man.
